    The liver is a nutrient-dense food offering a rich source of iron, vitamin B complex, vitamin A and both HDL and LDL. It’s also high in protein, low in fat.

    This is a misconception that liver meat is high in toxins due to its function of removing toxins from the bloodstream. Liver from different animal sources will differ in the levels of micro-nutrients present (vitamins and minerals). The most commonly consumed are beef, lamb, pork and to a lesser extent chicken. Beef rank top in Vitamin-A and Copper, Chicken on Iron, but Lamb ranks on Zinc and Selenium and ranks second in all other nutrients. This makes lambs liver the overall most nutrient dense of the selection. Lamb's liver has all types of nutrition in the proper amount so it is considered as the most nutritional liver.
